Absolutely delicious and EASY paleo chicken salad!

Hi friends! I hope you’re enjoying this gorgeous October! And if you’re not, you need to visit Rhode Island. I’m now convinced that Rhode Island has the most magical Octobers. Maybe it’s because I just moved here from a land-locked, Midwest state with less foliage (AKA Kansas). Maybe it’s because I now live close to water lined with orange and red and yellow trees. Either way, I’m in awe of the Rhode Island scenery, even while driving.

I really like chicken salad, so I have high standards. This chicken salad gets an A+ from me because it is delicious AND incredibly easy to throw together.

And that spice blend. It really puts this simple dish over the edge. 

One caveat: The recipes I promote usually focus on health + budget friendliness. In this recipe, two of the ingredients are pre-made from two amazing Paleo companies. That makes them more expensive than if you were to create the ingredients yourself, because you are paying for convenience. You don’t HAVE to use their products to make this chicken salad, but they are high quality, convenient, and I support the companies!

Simple Paleo Chicken Salad

  1. 4 cups cooked and shredded chicken thighs (I pop mine into my Instant Pot, and they're done in no time!)
  2. 1 cup celery, chopped
  3. 1/4 of an onion, minced
  4. 2 green onions, chopped

  6. 2 tsp Adobo Seasoning from Primal Palate
  1. Dump all ingredients into a big bowl and mix!
