Easy, delicious paleo stir fry!

Hi friends! I’m on a roll with recipes this month, and this is one of my favorites! This go-to recipe is packed with veggies, protein, AND flavor. It also makes plenty of amazing leftovers, which is always great in my book!

Stir-fry is just so easy and versatile. You can follow this recipe to the exact measurement, or easily swap ingredients depending on what you have in your fridge! 

Go-To Paleo Stir-Fry

Ingredients
  1. 5 whole carrots, chopped
  2. 1 lb brussels sprouts, chopped
  3. 1 small-medium cauliflower, chopped
  4. 1 yellow onion, chopped
  5. 1 jar kalamata olives, pitted and chopped
  6. 2 lbs grassfed ground beef
  7. 1 tsp onion powder
  8. 1 tsp garlic powder
  9. 1/2 tsp paprika
  10. 3 tsp dried oregano
  11. 1 tsp cumin
  12. 1 tsp red pepper flakes
  13. 1 3/4 tsp sea salt
  14. Optional: spaghetti squash
Start with the veggies
  1. First, chop the carrots and throw them in a BIG skillet.
  2. Put the lid on the skillet and cook on low heat while you chop the rest of the veggies.
  3. Throw the chopped brussels, cauliflower, olives, and onion into the skillet with the carrots.
  4. Put the lid back on the skillet and cook on medium-low heat, stirring occasionally.
  5. It should take 20-25 minutes for your veggies to get perfectly soft, so while they're cooking...
Cook the meat
  1. Take out another big skillet and crumble the ground beef into it.
  2. Cook on medium until beef is completely brown and cooked.
Putting it all together
  1. Once the veggies and meat are done cooking, pour the cooked ground beef into the veggie skillet.
  2. Season with spices, stirring to incorporate.
  3. Let cook for another 5 minutes, stirring occasionally.
  4. Enjoy!
Notes
  1. To make this dish go even farther (and to add more carbs), put a spaghetti squash in the oven to roast before you start the stir-fry. Pile the stir-fry on the cooked spaghetti squash "noodles"!
