“How Do I Cook Brussels Sprouts?” – The Farmers Market Series

DELICIOUS ways to cook brussels sprouts!

If you’re new to the blog, I’ve created these quick Farmers Market Series posts to highlight a different in-season veggie each month! This month we’ll look at how to cook brussels sprouts.

I was never really interested in trying brussels sprouts. It seems like they have a pretty bad reputation after being prepared in boring or over-boiled ways for so long, and I can understand why someone would not enjoy eating cabbagey mush.

But now…NOW I am a brussels sprouts fanatic. If they had a spot in every one of my meals, I don’t think I would mind.

Brown Butter & Herb Roasted Carrots

Delicious roasted carrots made with brown butter ghee and herbs! Makes a great healthy side dish!

I don’t like boring veggies. I need my salads to have all sorts of flavors and textures, and I like most of my veggies roasted or sautรฉed with fat, garlic, sea salt, and other seasonings (like my favorite-ever-I-could-eat-them-like-popcorn-brussels-sprouts recipe).

Paleo Banana Chocolate Walnut Muffins

Paleo Banana Chocolate Walnut Muffins

I do not consider myself to be much of a recipe creator – especially when it comes to paleo baking. I dabble, but I mostly follow recipes from other authors. So when I actually create something, and it’s awesome, I’m REALLY excited.

And I’m REALLY EXCITED about these muffins!!

Simple Paleo Chicken Salad (and a blog update!)

Absolutely delicious and EASY paleo chicken salad!

Hi friends! I hope you’re enjoying this gorgeous October! And if you’re not, you need to visit Rhode Island. I’m now convinced that Rhode Island has the most magical Octobers. Maybe it’s because I just moved here from a land-locked, Midwest state with less foliage (AKA Kansas). Maybe it’s because I now live close to water lined with orange and red and yellow trees. Either way, I’m in awe of the Rhode Island scenery, even while driving.

Blueberry Cinnamon Antioxidant Smoothie

Blueberry Cinnamon Antioxidant Smoothie

The winter season is all about warm, comforting foods and favorite treats. Combine that with the stress you may encounter during the holidays, and you’ve got yourself a recipe for a depressed immune system and a sore throat on Christmas day (I may know this from experience)!

“How Do I Cook Beets?” – The Farmers Market Series

How Do I Cook Beets?

I don’t think I ever ate beets as a kid, so they were a bit of a mystery to me. If you’re new to beets and open a CSA veggie box to find them sitting there, they might be a little scary to you, too! But don’t turn up your nose yet. Beets are not only nutritious and vibrantly colored – they can actually be pretty delicious if you have a good recipe! ๐Ÿ˜‰

How Do I Cook Chard? - The Farmers Market Series

Well, I have a new series for you. ๐Ÿ™‚

Iced Vanilla Coconut Milk

Iced Vanilla Coconut Milk

One of my favorite words is โ€œfrothโ€, which is why I think I like this drink so much. Seriously.

Growing up, I had a kid’s cookbook with a recipe for iced vanilla milk. I made it multiple times, and my favorite part was the cold foam at the top of the drink when I poured it out of the blender. I randomly remembered this drink the other day, and wanted to re-create it with coconut milk.

This paleo-fied version is just as yummy and just as frothy! Try it on a hot day and you’ll be glad you did. ๐Ÿ™‚
